no bake oatmeal cookies

With just a few pantry staples, these cookies come together in minutes, no oven required: just stir, scoop, and let them set. They’re rich with cocoa, creamy peanut butter, and sweet oats, making them the ultimate kid-friendly (and mom-approved) treat. Trust me; you and your kids will LOVE these!

Discover the joy of making no bake oatmeal cookies with this easy recipe. Enjoy the classic flavors and simplicity of this delicious treat. If these no bake cookies aren’t your thing, then check out one of my other favorite cookies, our Cranberry Oatmeal Cookies with Coconut, or our all time favorite, Peanut Butter Cookie recipe.

On the same note, quality of ingredients matters in – EVERY cookie you bake, but especially these. Top quality butter, milk, and coca power truly lends a flavor hand. Don’t skip the sprinkle of sea salt at the end, either. It will elevate these kid friendly sweets in to the world of adult guilty pleasures!

How To Make no-bake oatmeal cookies

Ingredients

  • 1/2 cup butter, softened at room temp
  • 1/2 cup milk
  • 2 cups granulated sugar
  • 1/2 cup peanut butter, creamy
  • 3 cups quick cooking oats, uncooked
  • 5 tablespoons cocoa powder
  • 1/2 cup walnuts, chopped
  • 1/2 cup raisins
  • 1/2 cup flaked coconut

Directions

  1. Lay the wax paper out evenly on a flat surface. Put butter, milk, and sugar together into a large pot. Bring the mixture to a boil over medium heat. Boil the mixture for 1 1/2 minutes.
  2. Remove the mixture from the heat. Turn the stove off. Add peanut butter, oatmeal, cocoa powder, walnuts, raisins, and coconut to the mixture. Stir the mixture until blended well.
  3. Drop the mixture from spoonfuls onto the wax paper.
  4. Allow to rest at room temperature until set, about 20 – 30 minutes (to speed up setting refrigerate).
  5. Store cookies in an airtight container at room temperature.

For a fun variation, swap peanut butter for almond butter or sunflower seed butter. It changes the flavor profile slightly, but the texture of these no bake cookies stays delicious.
