How To Make no-bake oatmeal cookies
Ingredients
- 1/2 cup butter, softened at room temp
- 1/2 cup milk
- 2 cups granulated sugar
- 1/2 cup peanut butter, creamy
- 3 cups quick cooking oats, uncooked
- 5 tablespoons cocoa powder
- 1/2 cup walnuts, chopped
- 1/2 cup raisins
- 1/2 cup flaked coconut
Directions
- Lay the wax paper out evenly on a flat surface. Put butter, milk, and sugar together into a large pot. Bring the mixture to a boil over medium heat. Boil the mixture for 1 1/2 minutes.
- Remove the mixture from the heat. Turn the stove off. Add peanut butter, oatmeal, cocoa powder, walnuts, raisins, and coconut to the mixture. Stir the mixture until blended well.
- Drop the mixture from spoonfuls onto the wax paper.
- Allow to rest at room temperature until set, about 20 – 30 minutes (to speed up setting refrigerate).
- Store cookies in an airtight container at room temperature.
For a fun variation, swap peanut butter for almond butter or sunflower seed butter. It changes the flavor profile slightly, but the texture of these no bake cookies stays delicious.
